Batch Ovens
Batch ovens are designed in a variety of sizes. Smaller, portable ovens, which produce smaller batches, are ideal for businesses that have need of limited batch sizes. Other batch ovens can be large enough that they are described as walk-in or truck-in ovens. These ovens often have double doors and integral shelving and are used for the production of very large batches. Their use tends to be limited to batch production of very large products or of multiple smaller products. Large-scale bakeries, food production and processing companies account for much of the demand for such products. Generally, batch ovens may be a better choice for small, young companies whose production methods are still in development. They are often less expensive than conveyor ovens and are better able to process a variety of product shapes and sizes.
Batch ovens, like all other varieties of thermal processing machinery, can be heated in a number of different ways. Different project demands call for different kinds of heating. Baking food is one of the least demanding applications for industrial oven equipment. Especially on a smaller scale, as in the case of a small conduction batch oven, a simple system of electric coils can be used to heat the air in the oven, which then heats the product. If a higher temperature is desired, natural gas-fired ovens may be used. As the batch becomes larger, conduction becomes less of a viable heating method as it tends to heat products unevenly. Convection, which is the transfer of heat between gasses, fluids and solids, is another word for a variety of heating methods in industrial and consumer ovens. Convection heats ovens more evenly because it employs a fan that circulates the hot air, allowing all products to come into contact with the same air temperature. The most efficient means of heat transmission in any oven happens in infrared ovens, which transfer heat from coils or another source directly to the product.
