Convection Ovens

Convection ovens use a motorized fan or blower to force air evenly throughout the cavity, ensuring a more even temperature distribution than with standard ovens. They are most often used in restaurants and other food-related industries.

Convection ovens may use gas or infrared heating sources. Gas-fired convection ovens typically have burners at the bottom of the cavity or between the cavity and an insulated wall.

Full-size convection ovens are large enough to fit six standard (18 x 26 x1”) pans, while half-size models accommodate up to five half-size (18 x 13 x 1”) pans. Convection ovens are also available in small countertop size, in large rack size, and in household-style range format.

Convection ovens typically use electronic sensors and thermostats and may have programmable cooking computers with features that allow the user to adjust not only time and temperature, but also fan speed and humidity.
