Deck ovens are distinguished by their long, flat cavity. Because of this feature, they are most often used for baking pizza or other items that fit in a short opening. Range ovens are the types of ovens most often seen in homes, and they are heated by radiant heat and natural convection. Gas range ovens are heated by burners located at the bottom, while electric range ovens are heated by panels at the bottom and top.
Convection ovens use forced-air to assure even heating throughout the oven. They may use gas or infrared heating sources. Full-size convection ovens are large enough to fit six standard (18 x 26 x1”) pans, while half-size models accommodate up to five half-size (18 x 13 x 1”) pans.
Another type of commercial ovens, rack ovens, are tall stainless steel boxes capable of baking large quantities at one time with a standard temperature throughout.
